Preheat oven to 375º
- 3 ripe bananas, mashed
- 1 Tbsp lemon juice
- 1/2 C oil
- ½ C sweetener
- ¾ C chopped dates (optional)
- 1 ½ C whole wheat pastry flour
- ½ C wheat germ
- ½ tsp salt
- ½ tsp baking soda
- ½ tsp. baking powder
- In a small bowl, mash the bananas with a fork, then mix in lemon juice, oil, sweeteners.
- In a separate bowl, mix together flour, wheat germ, salt, baking soda, baking powder.
- Add flour mixture to bananas et. al. And mix. A rubber spatula works well for this, and helps
scrape all ingredients together. You only need to mix until the wet and dry are 'just mixed'.
- Pour into a lightly oiled bread pan, and bake for 40-50 minutes.
- Test with a knife to see if the bread is done. You stick a small knife into the bread (all the way down)
and if it comes out clean (with no wet dough stuck to it) the bread is finished.
