Preheat oven to 375º

  1. In a small bowl, mash the bananas with a fork, then mix in lemon juice, oil, sweeteners.
  2. In a separate bowl, mix together flour, wheat germ, salt, baking soda, baking powder.
  3. Add flour mixture to bananas et. al. And mix. A rubber spatula works well for this, and helps
    scrape all ingredients together. You only need to mix until the wet and dry are 'just mixed'.
  4. Pour into a lightly oiled bread pan, and bake for 40-50 minutes.
  5. Test with a knife to see if the bread is done. You stick a small knife into the bread (all the way down)
    and if it comes out clean (with no wet dough stuck to it) the bread is finished.
